{copy cat} Nesquik Mix

I love a good copy cat recipe. It's like a little taste of home. I was excited when I came across this recipe and the kids were even more excited when they came home from school and found this waiting for them. Super easy, super cheap and definitely going to be a staple in our pantry from now on!


1/3 C cocoa powder
2/3 C sugar
pinch of salt

Mix well then add 1-2 tablespoons to a glass of milk (you do need to stir it a little extra so that the sugar dissolves). Store mix in an airtight container.

Berry Detox Smoothie

I'm a creature of habit. I eat the same thing every day for breakfast, lunch and my afternoon snack. Yes, I feel like a kid having a scheduled afternoon snack. But honestly, between 2-3:00 I become ravenous. I get the munchies in a real bad way and if I'm not conscious about having a healthy snack prepared then I will dig through the pantry and come up with all the junk food that I can find. So for like the past year this has been my go-to snack.  It is sweet enough to satisfy my sugar craving, but with all natural ingredients I can eat it without feeling guilty. I've found that if I sprinkle about 1/4 cup muesli (or granola) on top then it gives it a little more substance so that I feel full after eating it. I know there are about a million and one smoothie recipes out there, but this is my absolute favorite, so I thought it was worth sharing!


1 large banana (best if cut into chunks and frozen)
1/2 cup baby spinach leaves
1/2 cup frozen blueberries
1/2 cup almond milk (or more, depending on how thick you like it)
1 Tbs ground flaxseed, ground linseed, protein powder or wheat germ- just something to give it a little extra nutrition
1/4 cup muesli or granola
fresh berries to top (optional)

Add the banana, spinach, blueberries, almond milk and flaxseed to a blender and pulse until smooth. Pour into a glass and top with muesli/granola and fresh berries.

Banans Foster Crepes

Well, technically this isn't really considered Bananas Foster because there is no rum in it, therefore no alcohol to ignite (here is the rum version if you're interested). But it still has that rich caramelized banana flavor, so I'm going with it. Besides, the idea of flambeing something seems just a little above my technical skill level so we'll call this the beginners course. Call it what you want, these crepes are absolutely divine! I mean, a warm banana caramel sauce inside a buttery crisp crepe with whipped cream slowly melting on the top is a pretty great way to start any day!


Crepes:
1 ½ c milk
1 c flour
2 Tb sugar
1 Tb veg. oil
2 eggs
butter (for cooking)

In a bowl combine milk, flour eggs, oil, and sugar. Beat until well mixed. Heat a lightly greased skillet over medium heat, add a little butter and swirl around until melted. Remove from heat. Pour in approx. ¼ C of batter; lift and tilt skillet to spread batter. Return to heat and cook until it starts to bubble then flip it over and cook until lightly browned. Repeat with each crepe, adding more butter to the skillet each time (step-by-step crepe instructions here).

Filling:
1/2 C butter
1 C brown sugar
1/2 C heavy cream
3-4 bananas
1/2 tsp cinnamon
1/2 C chopped walnuts or pecans (optional)
Whipped cream (to top)
*can double the filling

Melt the butter in a heavy skillet over med-high heat. Add the brown sugar, stir and cook for a few minutes. Pour in the cream and whisk to combine. Slice the bananas at an angle then add to the sauce and mix. Add the chopped nuts and cinnamon. Stir over med-high heat until boiling then continue to cook for an additional minute or two. Serve warm inside crepes, drizzle with a little of the caramel sauce and top with whipped cream.

White Chocolate Dipped Granola Bites

These right here are the best little accident. We're planning a road trip this weekend, and road trip = a full day of baking. Road trips in New Zealand are usually to pretty remote locations without a lot of food options so I end up doing a lot of baking and cooking before hand to bring with us. Sometimes I really miss cheap fast food on every corner, but we sure eat a lot better! So after we fell in love with these White Chocolate and Cranberry Granola Bars I thought I'd try my hand at adapting my favorite Peanut Butter Granola into granola bars. They tasted delicious, which was no surprise, but they were a little crunchier and thinner so when I tried to cut them into bars they broke into pieces. I just so happened to have leftover white chocolate chips in the pantry. And cue angels singing. These turned out way better than I could have imagined. I think these may just be our new favorite road trip snack or anytime snack!


4 cups old fashioned oats
3 Tbs wheat bran (optional)
3 Tbs ground flax seed or linseed (optional)
1/4 cup desiccated coconut (finely grated-optional)
3/4 cup dark chocolate chips
1 tsp cinnamon
2 Tbs butter
1/4 cup honey
3 Tbs maple syrup
1/4 cup brown sugar
1/4 cup peanut butter
1 tsp vanilla
2 cups white chocolate chips

Preheat the oven to 350. Lay oats in a single layer on a baking sheet and toast for about 15 minutes, stirring half way through. Line a baking dish with parchment paper. While the oats are toasting, heat the butter in a small saucepan over medium heat. Add the brown sugar, maple syrup, honey, vanilla, peanut butter and cinnamon. Bring it to a boil and continually stir for 2-3 minutes then remove from heat. Put the toasted oats in a large bowl, stir in the wheat bran, flax seed and coconut. Pour the peanut butter sauce over the oats and stir to coat evenly. Gently mix in the chcolate chips then scoop the mixture into the prepared dish. Press firmly and evenly, then refrigerate for at least an hour. Remove and break into bite sized chunks. Put white chocolate chips in a microwave safe bowl and heat for 30 seconds, stir then heat for another 30 seconds and stir. Repeat until melted and smooth. Dip each granola bite into chocolate then refrigerate until chocolate has hardened.

Raspberry Cream Crepes

And Valentine's Day just wouldn't be complete without this family favorite. Berry Cream Crepes. You can use raspberries, strawberries, blueberries, blackberries, boysenberries...it's delicious any way! We just lucked out to have a raspberry bush in the backyard of the home we are renting here, so rasbperries were the obvious choice. These crepes are delicious any time of the year, but they are an extra special treat for our Valentine's Day breakfast!


Crepes:
1 ½ c milk
1 c flour
2 Tb sugar
1 Tb veg. oil
2 eggs
butter (for cooking)

In a bowl combine milk, flour eggs, oil, and sugar. Beat until well mixed. Heat a lightly greased skillet over medium heat, add a little butter and swirl around until melted. Remove from heat. Pour in approx. ¼ C of batter; lift and tilt skillet to spread batter. Return to heat and cook until it starts to bubble then flip it over and cook until lightly browned. Repeat with each crepe, adding more butter to the skillet each time (step-by-step crepe instructions here).

Filling:
2 C raspberries (or any other berry)
8oz pkg. cream cheese
¼ C powdered sugar

Topping:
1/4-1/2 cup heavy cream
1 cup chocolate chips
whipped topping
powdered sugar
fresh berries

Soften cream cheese then beat until light and fluffy, about 5 minutes. Add in powdered sugar and beat until smooth. Gently fold in raspberries (if using frozen berries, make sure they are thawed then rinse and pat dry). To make the chocolate sauce, heat cream in saucepan then slowly whisk in chocolate chips until smooth (adjusting amounts until desired consistency is reached). Spoon berry mixture onto crepe, roll up, dust with powdered sugar, drizzle with chocolate sauce and top with whipped cream and fresh berries.

Pink Hot Chocolate


I don't know when this tradition first began, but having pink hot chocolate with our Valentine's Day breakfast has been something we've loved for years now. It's fun having a novelty food that becomes a special part of the holiday. This hot chocolate is just dreamy and we could easily drink it all winter long, but I like to keep it as a special treat for the kids to look forward to and get excited about. I won't lie, I get just as excited to drink it as they do! And even though it's still technically summer over here, we woke up to a cold, rainy, overcast morning. The kind of morning made for slippers and hot chocolate. Especially if it's pink. Happy Valentine's Day!


1 heaping cup white chocolate chips
1 c. heavy cream
4 c. half and half
½ tsp vanilla
approximately 7-8 drops red food coloring

Pour the cream into a large saucepan over medium heat and stir until heated through. Whisk in white chocolate chips until melted, stirring until completely smooth. Whisk in the half and half, vanilla and food coloring. Continue stirring until heated through, but don’t bring to a boil. Serve in mugs, topped with mini marshmallows or whipped cream.

Cinnamon French Toast Sticks

French toast sticks have been a hit around our house for quite some time, but when my sister posted about this cinnamon version, I just knew we had to give it a try. I tweaked it a little using my favorite french toast sticks recipe, but the addition of the crusted cinnamon and sugar coating just made these to die for! And just when I thought they couldn't get any tastier...


8 slices Texas Toast (or 1 loaf bakery or homemade bread, sliced thick)
5 eggs
1/2 cup heavy whipping cream
1/2 Tbs vanilla extract
3 Tbs brown sugar
2 tsp ground cinnamon
1/2 tsp ground nutmeg
butter, for frying
maple syrup for dipping

Coating:
1 cup sugar
2 tsp cinnamon

Cut bread slices into 1 inch thick strips. Preheat large griddle or non-stick skillet. Mix 1 cup sugar and 2 tsp cinnamon in bowl, set aside for coating. In a large mixing bowl, combine eggs, cream, sugar, vanilla, cinnamon, nutmeg, and whisk until combined. Butter the griddle or skillet. Dip one slice of bread at a time into the egg mixture, flipping over once to coat the other side. Place on hot griddle. Cook on each side until golden brown. Remove from griddle and coat in cinnamon sugar mixture. Repeat with all slices of bread until coating mixture is gone. Add more butter to griddle or skillet as needed. Serve immediately with maple syrup.

White Chocolate & Cranberry Granola Bars

We went camping this past weekend and as I was trying to figure out what snacks to bring along I was so excited to come across these on my sister's blog. They were seriously amazing! They're delicious, aren't packed full of preservatives or processed ingredients, and are quite filling to keep little tummies full between meals. They're also easy to make and make quite a large batch, so totally hit the jackpot with these!


4 cups rolled oats
2 cups Rice Krispie cereal
1/2 cup shredded coconut
1/2 cup coconut oil or butter
1/2 cup honey
1 cup brown sugar
1 tsp salt
1 tsp vanilla
1 cup dried cranberries
1 cup white chocolate chips

Line a baking dish with parchment paper. In a large mixing bowl, mix oats, cereal and shredded coconut. In a small sauce pan, melt the coconut oil or butter over medium heat. Add honey, brown sugar and salt. Stir together then bring to a boil. Once the boil has reached all the way around the edges of the pan, begin timing. Allow mixture to boil for 2 minutes. You may need to turn down the heat so it doesn't overflow, but keep it boiling. After two minutes, remove from heat and stir in vanilla. Pour over the oat mixture. Stir thoroughly until oats are completely covered. Stir in cranberries and white chocolate, or whatever mix-in's you choose. Pour mixture into parchment lined baking dish. Use your hands to press firmly into pan. If you don't press firmly enough, the bars will fall apart. Place pan in refrigerator for 30 minutes. Remove parchment paper from pan and place on firm, flat surface. Cut into bars and store in airtight container.

Best of 2014


Happy New Year! We rung in the new year on a beautiful secluded beach in Golden Bay here on the South Island of New Zealand. It was perfect in every way. We're headed off to explore a little of the North Island in a few days (thank goodness for scheduled posts :), but I just wanted to check in and tell you thank you for all of your support these past few months. I've really enjoyed starting up this blog again after such a long break. I am so excited to have all our family recipes in one place and I've loved the chance I've had to share our favorite dishes with you, because I believe all good things deserve to be shared. I know this is just a tiny little small time blog in a world that's over saturated with big time recipe blogs, but I've enjoyed sharing this little space with you. I've appreciated all of your kind words, thoughtful comments and positive feedback, it means a lot. Blueberry Banana Crumb Bread

I have this bad habit. Ever since I made these Apple Crumb Muffins I can't help but put a crumb topping on every type of muffin or bread that I make. It just transforms the ordinary into the extraordinary and I find myself licking every last crumb off the plate. Literally. It's kind of embarrassing when you get caught doing it.  I love banana bread and I also love blueberries and for the life of me I can't remember where I got this recipe. I think maybe it was a combination of a banana bread recipe and a blueberry bread recipe? I don't know, but what I do know is that this bread is so moist and delicious, I guarantee that I won't be the only one licking my plate clean.


3/4 cup buttermilk
3/4 cup packed light brown sugar
1/4 cup butter, softened
2 large eggs
3 medim mashed ripe bananas
1 1/4 cups whole-wheat flour
1 cup all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 1/4 cups blueberries, fresh or frozen
Crumb topping:
2/3 cup packed brown sugar
4 tablespoons all-purpose flour
1 teaspoon ground cinnamon
4 tablespoon butter, room temperature

Preheat oven to 350°F. Coat one large loaf pan or 4 small loaf pans with cooking spray. Whisk buttermilk, brown sugar, butter and eggs in a large bowl. Stir in mashed bananas. In a separate bowl, sift together whole-wheat flour, all-purpose flour, baking powder, cinnamon, baking soda, salt and nutmeg. Mix the dry ingredients into the wet ingredients and stir until just combined. Fold in blueberries. Transfer the batter to the prepared pan(s). Mix crumb topping ingredients together then sprinkle on top. Bake about 60-65 minutes for a large loaf, and 30 minutes for the smaller loaves, or until a toothpick comes out clean. Cool in the pan for 10 minutes, then turn out onto a wire rack. Let cool before slicing.

Puff Pastry Donuts

We used to love making homemade donuts using Pillsbury Grand's biscuits. Add that to the list of things we can't get here and another mission to find something to replace it. I tried a few different recipes from scratch and I must be a donut delinquent because they were all too time consuming and never turned out the way the picture looked. When I came across this recipe it was like the heavens opened and angels began to sing. Not only do we have puff pastery, but it is super quick, super easy and super delicious. Little dream puffs on a plate is what these are.


2 sheets puff pastry, thawed
Vegetable oil, for frying
2 cups powdered sugar
4 Tablespoons milk
2 teaspoons vanilla extract

On a lightly floured surface, roll out puff pastry. Cut circles out of puff pastry using two different sized circle cookie cutters, a larger circle for the outside and a smaller circle for the center. Fill a large pot with an inch of vegetable oil and heat over medium-high heat. Cook donuts and donut holes in hot vegetable oil, flipping when one side is golden. In a mixing bowl, whisk together sugar, milk and vanilla to make glaze. While the donuts are still hot, dip them in the glaze.

Buttermilk Bran Muffins

Do you know what I miss from the states? Cold cereal. An entire aisle filled with nothing but cold cereal is something I will never take lightly again. We have about 5 different choices here, most of which have "wheat bix" in one form or another on the title. And most of which are like $7 per box. And not a single rainbow shaped marshmallow in sight, such a pity. I mean, it's like really a good thing I'm not pregnant here, that's all I ate for 9 months straight. But being forced to think outside of the cold cereal box has been a good thing. Whenever I think of bran I think of dry, tasteless and pretty much blah. These right here have changed my opinion. A friend of mine passed along this recipe years ago and I never thought I'd see my kids inhale anything bran related, but these disappear faster than any bowl of Lucky Charms and I can feel good knowing they're having a healthier start to their day.



1 1/2 cups wheat bran
1 cup buttermilk
1/3 cup vegetable oil
1 egg
2/3 cup brown sugar
1/2 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt

Preheat oven to 375 degrees F (190 degrees C). Grease or line muffin tin. Mix together wheat bran and buttermilk; let stand for 10 minutes. Beat together oil, egg, brown sugar and vanilla and add to buttermilk/bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into buttermilk mixture, until just blended. Fill each muffin cup 2/3 full with batter. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Kneader's Cinnamon Syrup

With "Kneaders" in the title, this recipe doesn't even need an introduction, you know it's going to be delicious. It's one of my favorite home made syrup recipes and after you make it I'm sure you'll see why!


1 cup sugar
1/2 cup light corn syrup
1/4 cup water
3/4 teaspoon ground cinnamon
1 (5 ounce) can evaporated milk

In a saucepan, combine the sugar, corn syrup, water and cinnamon. Bring to a boil over medium heat stir for 2 minutes. Remove from heat and let cool for 5 minutes. Stir in evaporated milk. Serve over french toast or pancakes.

*we don't have light corn syrup here so I use golden syrup instead, making the color a little darker than it would normally be.

Cinnamon Toast Muffins

It's no secret that I have a thing for muffins. I love each recipe for a different reason and the reason why I love this recipe, besides the fact that they taste amazing, is because when it's grocery shopping day and the fridge and cupboards are bare and it looks like the only options for breakfast are a half of a cucumber or mayo, then these will always save the day. The ingredients are usually always on hand and they are so quick to whip up. Five minutes tops and they're in the oven cooking while you're searching for lost shoes and signing parent notices before school starts. So yummy, so quick, so easy---I'm so all over that.


1-¾ cup flour
1-½ teaspoon baking powder
½ teaspoon salt
½ teaspoons nutmeg
½ teaspoons cinnamon
⅓ cup vegetable oil
¾ cups white sugar
1 egg
¾ cups milk

Topping:
¼ cups butter
⅓ cups white sugar
1 tablespoon cinnamon

Preheat oven to 350 and line muffin tin. Combine flour, baking powder, salt, nutmeg and cinnamon. In a separate bowl, combine oil, sugar, egg and milk. Add dry ingredients and stir only to combine. Fill 12 muffin cups 2/3 full and bake for 15-20 minutes. For the topping, melt the butter in a bowl. Combine the white sugar with the cinnamon in another bowl. While muffins are still hot, dip in butter, then into the sugar/cinnamon mix. Let cool.

{guest post} All Things Pumpkin!

I love my sister, but I just think it's cruel for her to be sending me these tantalizing pumpkin recipes when I don't have access to canned pumpkin (and I attempted making my own pumpkin puree last year and swore off ever doing it again)! These really do look amazing and I am definitely adding it to my list of recipes to make when we move back. Who cares that we'll be moving back in the middle of the Arizona summer heat, I'm cranking up my air conditioner, putting on some Christmas music and baking up a great big pumpkin storm. Pumpkin Pie Slow Cooker Oatmeal

I doubled this recipe so that we had leftovers that we've been enjoying all week long. Such a yummy way to get a cold snowy day off to a good start. I tweaked a few things and changed the recipe accordingly.

6 cups water
1 cup half and half or milk
2 1/2 cups steel cut oats
1 cup pumpkin purée
1 cup firmly packed brown sugar
2 tablespoons butter
1 tablespoon pumpkin pie spice
1 teaspoon cinnamon
1/2 teaspoon salt

Stir all the ingredients together in the slow cooker and on LOW overnight, about 8 hours. When it is done, it will still look liquidy. Give it a good stir and it will all come together. Put in individual bowls and add a little half and half (or milk) and sprinkle with brown sugar and cinnamon. Serve immediately. Save any leftovers in the fridge or freezer... this stuff reheats beautifully!

Pumpkin Butter

I originally made this because I needed it for the Pumpkin French Toast Bake (recipe below), but I was so excited to have the pumpkin butter. It made way more than I needed for the recipe and I have a mostly full jar of it in my fridge just waiting to be spread onto a thick slice of homemade bread. I think I might get some cute little jars and give them out with a loaf of bread as neighbor gifts this year. It would also be a cute gift for teachers too. The possibilities are endless! I had no idea how much I was needing Pumpkin Butter in my life! It is super easy to make and made my house smell so good!


1 (29 ounce) can pumpkin puree, approx. 3 1/2 cups or fresh
3/4 cup apple juice
1/2-1.5 teaspoons ground ginger (optional, sometimes I omit)
1/2 teaspoon ground cloves
1 cup Sucanat (or brown sugar)
1 tablespoon ground cinnamon
1/2 teaspoon ground nutmeg
1-2 tsp fresh lemon juice

Combine pumpkin, apple juice, spices, and sugar in a large saucepan and stir well. Bring mixture to a boil, covered with lid ajar (I prop it with a wooden spoon). Reduce heat to low-medium and simmer, covered with lid ajar, for 35-45 minutes, stirring frequently. Be careful as the mixture bubbles and pops! Remove from heat and let it sit for a few minutes before removing lid. Adjust spices to taste. Stir in lemon juice. Once cool, pumpkin butter can be kept in an airtight container in the fridge for up to 3 weeks. Makes enough to fill one large mason jar or about 3.5 cups.

Pumpkin Cream Cheese French Toast Bake

Everybody in my family voted that this dish should be this year's Christmas morning breakfast. Watch out, cinnamon rolls, there's a new favorite in the house!

5 1/2 - 7 1/2 cups 1-inch bread cubes (depending on type of bread)*
7 large eggs
2 cups milk (any kind)*
1 tsp vanilla extract
1 1/2 tsp pumpkin pie spice
1/4 cup pumpkin BUTTER (or 1/2 cup pumpkin puree)*
8 oz block of cream cheese
3-4 tablespoons brown sugar for topping
nuts, like pecan or walnuts (optional - BUT I SAY IT'S MANDATORY)

Cut any kind of bread into 1-inch cubes - I recommend a crusty, whole grain variety, but sandwich bread will work, too. Just use enough slice to fill a lightly greased 9x13 baking dish quite full. Cut the cream cheese into cubes and tuck in among the bread cubes. If you want less of a cream cheese flavor, you don't have to use the whole block. In a large bowl, whisk together eggs, milk, vanilla, pumpkin butter and pie spice until well combined. Pour over bread and push down with a spoon or your hands until it's all soaked and mostly covered. Cover with saran wrap or lid and refrigerate overnight. In the morning, preheat oven to 350 degrees, uncover and top with brown sugar, additional pumpkin pie spice and nuts (optional). Bake for 35-45 minutes or golden brown and no longer wet. Serve immediately with maple syrup, honey or agave nectar. Store leftovers in the refrigerator covered for up to a couple days.

NOTES
* For the bread cubes, just use as much bread as it takes to fill the bottom of your dish generously, plus up about 1 to 1.5 inches. If you've added too much to soak up the liquid, just remove some. And if it looks too wet, add some more bread.
* I HIGHLY recommend using pumpkin butter as it has a concentrated pumpkin flavor and is much sweeter than puree. But if using puree instead of butter, it's important to compensate the flavor by adding a bit more puree, pumpkin pie spice, and a little agave nectar, brown sugar or maple syrup to the batter. Otherwise, it will lack that delicious fall, pumpkin flavor you're going for.
 * I used 2%, but use skim or low-fat for a lighter recipe. Alternatively, use non-dairy such as soy or almond.

Extraordinary Eggs

My husband and I don't disagree on much, but one thing we can't agree on is scrambled eggs. He likes them runny and slightly under cooked, I like them dry and slightly over cooked. Thankfully we have these eggs to save our marriage. It is the one way we both love our eggs, and as a bonus our kids love them too so everyone is happy when these are on the table. They may take a little longer to cook than scrambled eggs, but they are absolutely delicious and totally worth the wait! I've also found that these are a great way to cook eggs for a crowd. If you're having out of town guests coming to visit for the holidays, just stick a pan or two of these in the oven while you whip up a batch of these fluffy pancakes and these homemade hashbrowns and you may never get your guests to leave ;)


10 eggs, beaten
1 cup milk
1/4 tsp onion powder
1/4 tsp garlic salt
1 cup cheddar cheese, grated
1 cup mozarella cheese, grated
optional toppings: chives, chopped green onions, salsa, avacado or sour cream
*My kids prefer these plain, but you can mix in ingredients such as chopped ham, peppers, tomatoes, mushrooms, etc.

Preheat oven to 325 degrees. Whisk together above ingredients then pour into greased 8.5 x 11" baking dish. Bake for 40-45 minutes, or until lightly brown and eggs seem firm, not runny. Cut into squares and garnish each serving with desired toppings.

The Secret to Homemade Hashbrowns

I never gave much thought to hashbrowns. I mean, I've given a lot of thought on how I wanted to eat them, but just not a lot of thought about how I wanted to make them. I just figured the only way to do it was to drive yourself down the grocery store and rummage through the frozen food section. They don't sell hashbrowns here and it was a light bulb moment when we were craving them and I realized I could actually make them from scratch. I mean, they are just potatoes after all. Now that we've made them this way I can promise you that we are never going back to that frozen food section again. Well, except for ice cream. But just not hashbrowns.



6-7 russet potatoes
½ C butter
2 tsp salt
1 tsp pepper

And here's a few tips I've learned after making them several times so that they don't turn into a pile of goop:

1) Peel and boil potatoes 25 min, or until tender. If they're not soft all the way through then they turn out slimy. Just don't get distracted by "The Fault in our Stars" and overcook them to the point that they're falling apart in the pan or they will be more like mush. Just as an example, not saying that's ever happened.
2) Refrigerate overnight. Which requires you thinking about breakfast the night before, but this is definitely a critical step and it makes breakfast prep quick in the morning as well.
3) Shred potatoes, melt butter in skillet over med-high heat then add potatoes, season with 1 tsp salt and ½ tsp pepper then cook until lightly browned and crispy then flip (about 10 minutes or so), season with remaining salt and pepper and cook until the other side is lightly browned and crispy. Make sure you only flip it over a few times, these are not scrambled eggs, and if you over stir them they will become mushy. Just a few simple tricks that will take your breakfast scene by storm!

Mini Chocolate Chip Pancake Dippers

There's just something about cute and tiny that make things taste better. My kids inhale these for after school snacks, but they're also great for breakfast on the go (minus the syrup of course) or just a fun way to mix up the usual breakfast pancakes.


3/4 cup milk
2 tablespoons white vinegar
1 cup all-purpose flour
2 tablespoons white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
2 tablespoons butter, melted (plus extra butter for the pan to cook)
1/2 C mini chocolate chips

Combine milk with vinegar in a bowl and set aside for 5 minutes to "sour". Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and melted butter into "soured" milk then mix into dry ingredients and whisk until lumps are gone. Add chocolate chips and mix. Heat a large skillet over medium heat, and rub with butter. Pour 1 Tbs of batter for each pancake onto the skillet and cook until bubbles appear on the surface. Flip with a spatula, and cook until lightly browned on the other side. Repeat, rubbing more butter onto the skillet each time before pouring on more batter.

No Bake Granola Bites

I'm always on the hunt for new snacks to mix up the after school scene. I know I've found a winner when it's 1) easy to make 2) healthy 3) kid approved. This one sure fits the bill. The funny part was that my one particularly picky eater has a no oatmeal policy. He refused to even try them but I finally made him take just one bite (I'm sure there was a bribe involved). He wasn't quite ready to swallow his pride, so with a little eye roll he's like, "fiiiine, I guess I'll have one. Or two. Or maybe three". He ate five. If that doesn't sell you, I don't know what will.


½ cup almond butter
⅓ cup honey
1 tablespoon coconut oil
1 cup old-fashioned oats
½ cup Rice Krispies cereal
½ cup mini chocolate chips
½ cup golden raisins
2 tablespoons ground flaxseed meal
¼ teaspoon cinnamon
Pinch of salt
*if you're a kiwi cook, I have yet to find almond butter and coconut oil, so substitute with peanut butter and canola oil

Add almond butter, honey and coconut oil to a microwavable bowl and heat for 30 seconds. Stir. Allow to cool slightly. Combine oats through salt together in a large bowl. Gently stir in almond butter mixture being careful not to crush the Rice Krispies. When thoroughly combined, place in refrigerator for 30-45 minutes or until chilled enough to handle. Roll oat mixture into approximately 20 small balls. Store in the refrigerator.
