Boston Brown Oven Roasted Potatoes

Oh you guys, these are not your typical oven roasted potatoes. The melted butter and seasonings work together like magic to transform ordinary roasted potatoes into the extraordinary. If ever there is a need for a potato side dish I go straight for these, especially if we're having a barbecue, it's the perfect companion to grilled meats. A friend passed this gem along years ago and it never gets old, the more you make it, the more you find yourself craving it!


8 potatoes
½ c butter
1 Tbs paprika
2 tsp salt
1 Tbs seasoned salt
½ tsp pepper

Preheat oven to broil and line a baking sheet with tin foil. Peel and dice potatoes (or scrub them good and leave the peel on). Parboil potatoes until just tender, but still firm. Melt butter in a large bowl and add seasonings stir until combined then add diced potatoes and toss to coat evenly. Pour onto a foil lined baking sheet and broil for about 20-25 minutes, turning halfway through, until lightly browned and crispy on top.
