Chocolate Eclair Cake

This dessert is life changing. It will leave you dreaming about it as you fall asleep at night and salivating at the mere mention of it. I dare say this might be my favorite dessert as of now and that is saying a lot. Each bite is like a creamy velvet dream that you never want to wake up from.


Crust:
1 cup water
1/2 cup butter
1 cup all-purpose flour
4 large eggs

Filling:
1 (8 ounce) package cream cheese, softened
1 large box (5.1 ounces) vanilla instant pudding
3 cups milk

Topping:
1 pint heavy whipping cream
1/3 C powdered sugar
chocolate syrup (or bring 1/3 C of cream to a boil, remove from heat and stir in chocolate chips until desired consistency)

 Preheat oven to 400. Lightly grease a 9"X13" glass baking pan. For the Eclair Crust: In a medium saucepan, melt butter in water and bring to a boil. Remove from heat. Stir in flour. Mix in one egg at a time, mixing completely before adding another egg. Mix until fully incorporated. If it looks like a gooey blob then you did it just right. Spread mixture into pan, covering the bottom and sides evenly. Bake for 20-30 minutes or until golden brown. Remove from oven and let cool. For the Filling: Whip cream cheese in a medium bowl. In separate bowl make vanilla pudding by beating the pudding mix and the milk for 3 minutes and put in the fridge until set. Slowly add pudding to cream cheese, mixing until there are no lumps. Pour filling into crust. Beat cream until soft peaks form then add powdered sugar and beat until blended, spread evenly over filling. Serve with a drizzle of chocolate syrup.
