Restaurant Style Spanish Rice

It's no secret that I love Mexican food. And every good Mexican dish needs a great side kick. This Spanish Rice recipe that my friend passed along years ago has been the delicious side kick to many many meals over the years. I've tried a couple of different recpies for Spanish Rice and this is definitely the winner!


1 ½ C white long grain rice (not Minute Rice)
1 Tbs olive oil
2 T chopped, minced onion
2 C chicken broth
1 8oz can tomato sauce (or salsa-thanks for the tip, Tricia!)
1 tsp garlic powder
Salt to taste
1 Tbs taco seasoning

Saute oil, onion, and rice over medium heat until rice is golden and onions are soft. Add chicken broth, tomato sauce, and seasonings, bring to a boil. Reduce heat to low, cover. Simmer 25-30 minutes, or until liquid is absorbed. Fluff and enjoy.
