Peanut Butter Cup Popcorn

A few years ago we had a popcorn bar as refreshments for a church activity and after just one handful of this Peanut Butter Cup popcorn I knew I needed the recipe. I wasn't the only one all over this stuff, it was by far the crowd favorite. We later made the same popcorn and packaged it up for Father's day gifts with our Activity Day girls and added a tag that said, "Pops, you're the best!". It was a hit, I mean, this stuff will beat a new tie and socks any day.


1 c. brown sugar
1 c. light corn syrup
1 c. peanut butter
½ c popcorn kernels
1/2 c chocolate chips

Pop kernels in an air popper or over the stove. In medium saucepan combine brown sugar and corn syrup. Bring to boil over medium high heat and cook for 2-3 minutes, stirring frequently. Remove from heat and whisk in peanut butter. Pour over popcorn and stir until well coated. Microwave chocolate chips for 30 second intervals until melted, stirring in between each interval (about 1- 1 1/2 minutes) then drizzle over popcorn. It also tastes delicious with M&M's mixed in!
