Apple Rhubarb Crumble

We have really lucked out with our living situation here. Our landlord lives in our garage that she has converted to a flat. I know it sounds like I'm being really sarcastic because the idea of having your landlord right next to you sounds like a recipe for disaster. But it's actually been the best thing about living here because she has become our family. Grandma Judy. She spoils us and loves us and we don't know what we're going to do when we have to leave her to move back home. But we also lucked out because she is an amazing cook and is always bringing dishes over for us to try. This Apple Rhubarb Crumble was just heavenly. I've never cooked with rhubarb before so it always intimidated me, but the recipe came from The Great New Zealand Cookbook that she was so kind to buy a copy for me, and in the recipe it says there's a 10 min prep time, 10-20 min cook time and the skill level is easy. And did I mention it was absolutely heavenly? Definitely my kind of recipe!


Fruit mixture:
3 large apples
1/2 C water
2 C fresh rhubarb
1/2 C sugar
1tsp finely grated orange zest

Crumble:
7 Tbs butter
1/2 C self rising flour
1/2 C brown sugar
1/2 C rolled oats
vanilla ice cream or heavy cream for serving

Preheat oven to 350 F. Peel, quarter and core apples, then cut into slices and place in a saucepan with 1/2 C water. Simmer for 5-8 minutes.  Meanwhile, wash ruhbarb and chop into 1 cm lengths. Add rhubarab, sugar and orange zest to apple, return to a boil and simmer for 3 minutes. Pour mixture into a greased baking dish or four individual ones. Make the crumble by rubbing butter into flour with your fingers, then mix in brown sugar and oats. Sprinkle crumble evenly over the fruit mixture. Bake for approximately 20 min for a large dish and 10 minutes for small dishes. Serve warm with vanilla ice cream or heavy cream.
