Cilantro Lime rice

I am guilty of using Rice-a-roni waaaay to often, but this recipe may change all that. It is so light, fresh, flavorful and easy. An instant favorite. Great served as a side or wrapped up with a burrito.

1 1/2 C long grain rice

2 C chicken broth
2 Tb butter
2 small limes
zest from one lime
½ C chopped cilantro leaves
1 tsp salt
Saute rice in butter until lightly browned, add chicken broth and bring to a boil. Reduce heat and cover then cook for 20-25 minutes or until liquid is absorbed. Fluff cooked rice with fork, add lime juice, zest, cilantro and salt (you can also add a little more butter for flavor, I prefer the butter sprinkles). Stir well and serve warm.
